Where can I find info on food history about how people in the carribean cooked in the 1800s?

I am working on a book and need to know where I can find food historians or information on how food was prepared in Puerto Rico and the Carribean in the 1800s. For example when was Cilantro introduced to the island? Any leads would be very helpful. Thank you.
